The growing interest in regulating flavored E-liquids must incorporate understanding of the “”flavoring profile”” of each E-liquid-which flavorings (flavoring chems.) are present and at what concentrations not just focusing on the flavor on the label. We investigated the flavoring profile of 10 different flavored E-liquids We assessed bronchial epithelial cell viability and apoptosis, phagocytosis of bacteria and apoptotic cells by macrophages after exposure to E-cigarette vapor extract (EVE). We validated our data in normal human bronchial epithelial cells (NHBE) and alveolar macrophages (AM) from healthy donors. We also assessed cytokine release and validated in the saliva from E-cigarette users. Increased necrosis/apoptosis (16.1-64.5% apoptosis) in 16HBE cells was flavor dependent, and NHBEs showed an increased susceptibility to flavors. In THP-1 differentiated macrophages phagocytosis was also flavor dependent, with AM also showing increased susceptibility to flavors. Further, Banana and Chocolate were shown to reduce surface expression of phagocytic target recognition receptors on alveolar macrophages. Banana and Chocolate increased IL-8 secretion by NHBE, whereas all 4 flavors reduced AM IL-1β secretion, which was also reduced in the saliva of E-cigarette users compared with healthy controls. Flavorant profiles of E-liquids varied from simple 2 compound mixtures to complex mixtures containing over a dozen flavorants. E-liquids with high benzene content, complex flavoring profiles, high chem. concentration had the greatest impacts. The Flavorant profile of E-liquids is key to disruption of the airway status quo by increasing bronchial epithelial cell apoptosis, causing alveolar macrophage phagocytic dysfunction, and altering airway cytokines.

This study aimed to evaluate the volatile compounds of chocolates made of Brazilian cocoas and statistically track them according to the products sensorial profile in order to relate them to consumers’ acceptance by preference map methodol. The intensity of the chocolate, acidity, woody, smoked, green, floral, burned, musty, and cocoa notes from chocolates produced with cocoa from different Brazilian states were analyzed by a trained panel and by 128 consumers. Samples from Cote dIvoire, which is known for its high-quality chocolate, were evaluated for comparison. Solid-phase microextraction headspace sampling/gas chromatog.-mass spectrometry was employed to evaluate the samples volatile compounds One hundred volatile compounds were identified within the samples. The results from the preference maps showed that the maximum preference was found for chocolate made of cocoa from Rondonia, Bahia, and Espirito Santo and Cote dIvoire and organic samples from Para. The ideal sample point was characterized by intense chocolate, floral, and woody notes and mild green and burned notes. The presence of furfural, 3-Me butanal, phenethyl acetate, 2-phenyl-5-methyl-2-hexenal, Me pyrazine, phenethyl acetate, 2-phenyl-5-methyl-2-hexenal, and tetra-Me pyrazine were shown to be important for consumer acceptance in the ideal product, whereas the presence of (Z)-2-heptenal and 2-pentyl furan may increase consumer rejection. 2,3-Me pyrazine, Me pyrazine, and 2,3-butanediol, which are important volatile compounds previously reported in the literature, were statistically tracked to both pos. and neg. sample attributes and must be better explored concerning consumers acceptance of chocolates.

The Pixian broad bean paste (PBBP) is widely welcomed by consumers in China due to its unique aroma. The objective of this study was to characterize the key aroma of PBBP. The aromas of PBBP were fractionated by normal phase-liquid chromatog. (NP-LC) and detected and identified by gas chromatog.-olfactory (GC-O) coupled with gas chromatog.-mass spectrometry (GC-MS), and quantitated by stir bar sorptive extraction (SBSE). The results showed that 58 aroma-active compounds were identified in PBBP, of which acids and phenolics had the highest concentration, and 39 odorants were demonstrated as important odorants. Besides, aroma recombination tests and statistical anal. showed that the original PBBP and recombinant have no significant difference in sweat/sour, roasted, and floral attributes, proving that this study successfully simulated the typical aroma of PBBP. The omission tests demonstrated 4-ethylguaiacol and 4-vinylguaiacol as the key odorants and revealed the significance of sotolon, 4-hydroxy-2,5-dimethyl-3(2H)-furanone (HDMF), the entire class of phenolics, and the entire class of acids, particularly acetic acid, 3-methylbutanoic acid, 4-methylpentanoic acid may have a synergistic effect, for the overall aroma of the PBBP.

Headspace sorptive extraction technique using silicone based sorptive media coated stir bars is used for the first time here to extract, identify, and quantify heavy volatile organic compounds present in Escherichia coli culture headspace. Detection of infection presence is largely accomplished in laboratories through phys. sampling and subsequent growth of cultures for biochem. testing. The use of volatile biomarkers released from pathogens as indicators for pathogenic presence can vastly reduce the time needed while improving the success rates for infection detection. To validate this, by using a contactless headspace sorptive extraction technique, the volatile compounds released from E. coli, grown in vitro, have been extracted and identified. Two different sorptive media for extracting these headspace volatiles were compared in this study and the identified volatiles were quantified. The large phase volume and wider retention of this sorptive technique compared to traditional sampling approach enabled preconcentration and collection of wider range of volatiles towards developing an extensive database of such heavy volatiles associated with E. coli. This supplements the existing data of potential bacterial markers and use of internal standards in these tests allows semi-quant. estimation of these compounds towards the development and optimization of novel pathogen sensing devices.

The cocoa bean shell (CBS) is a main byproduct of cocoa processing, with great potential to be used as an ingredient for functional foods because of its nutritional and flavor properties. This study aimed to characterize and classify CBSs obtained from cocoa beans of diverse cultivars and collected in different geog. origins through their volatile profile assessed using headspace solid-phase microextraction gas chromatog.-mass spectrometry (HS-SPME/GC-qMS) and E-nose combined with principal component anal. (PCA). The study provides, for the first time in a representative set of samples, a comprehensive fingerprint and semi-quant. data for >100 volatile organic compounds (VOCs), such as aldehydes, ketones, pyrazines, alcs., and acids. Through PCA, a clear separation of the Criollo cultivar from the other cultivars was achieved with both GC-qMS and E-nose anal. techniques because of the high content of key-aroma VOCs. Several biomarkers identified by GC-qMS, such as 2-hepanol, 2-methylpropanoic acid, and 2,3,5-trimethylpyrazine, recognized as key-aroma compounds for cocoa beans, were found suitable for the classification of CBSs according to their quality and origin. In this study the quality of 26 fermented cocoa beans from 4 different countries (Vietnam, Indonesia, Peru and Ghana) is assessed by means of both a compositional anal. (amino acids, reducing sugars, polyphenols and lactic acid) and profiling of their volatile aroma composition (Mass Spectrometry (MS)-fingerprinting and Headspace-solid Phase Micro-extraction-Gas Chromatog.-Mass Spectrometry (HS-SPME-GC-MS)) following high roasting processing (30 min at 150 °C). Compared with the labour-intensive measurement of cocoa precursors, MS-fingerprinting on the cocoa headspaces appeared to be a very powerful and fast classification technique. Different cocoa groups were researched having unique organoleptic characteristics which were affected by fermentation, roasting conditions and geog. origin. A clear separation of fine flavor cocoa (Criollo variety), well fermented/roasted cocoa and low quality cocoa could be made. Addnl., the clustering was confirmed by more conventional HS-SPME-GC-MS aroma analyses on the cocoa samples. Several markers for the bean origin/quality were identified. Roasting degrees were also calculated based on typical pyrazine ratios.

This study investigated the production of process flavorings by direct extrusion method using a model system consisted of 80(weight/weight) D-xylose and glycine, alanine, or valine at 20(weight/weight). The extruder′s barrel temperatures were controlled at 65, 80, and 50 °C. The aroma compounds in the obtained products were analyzed by gas chromatog.-mass-spectrometry (GC-MS). Some properties relevant for food application including solubility, water absorption index, and oil absorption capacity were also determined Characteristics and color profiles of the extruded flavorings were similar to the process flavorings obtained by conventional method (reflux method). Process flavorings using valine presented the highest L* value (lightness, 59.6), water absorption index, water solubility index, and oil absorption capacity at 3.26 and 1.76 g/g sample, and 2.72 g oil/g, resp. Use of glycine resulted in the highest frequency of just-about-right for the taste (60), while alanine gave the highest frequency for odor (53.3). The extruded flavorings exhibited sweet, sour, and meaty flavor with 13 and 12 volatile compounds from glycine and alanine. When valine, the higher mol. weight amino acid in the bitter group was used, 37 volatiles with more complex flavor profiles were found, among of which, the compound 5-methyl-2-phenylhex-2-enal, which exhibits a chocolate odor, was also present. Sweet and meaty process flavorings could be produced by direct extrusion using D-xylose and glycine, alanine, and valine, with low moisture content at only 5by weight The information obtained about their phys., taste and sensory properties, volatile profiles, are beneficial for further use in industrial applications.
