Shen, Qing published the artcileCharacterization of volatile compounds in pickled and dried mustard (Brassica juncea, Coss.) using optimal HS-SPME-GC-MS, Formula: C13H16O, the main research area is Brassica volatile compound HS SPME GC MS.

Pickled and dried mustard (PDM; Brassica juncea, Coss) is a traditional fermented vegetable product that is widely consumed as a food ingredient with aromatic flavor in China. Here, we aimed to determine the volatile compounds in PDM by headspace solid-phase micro-extraction combined with gas chromatog.-mass spectrometry (HS-SPME-GC-MS). The results showed that a total of 41 volatile compounds were identified and quantified in PDM by optimized HS-SPME-GC-MS. Approx. 15 compounds were considered to be the dominant volatile compounds in PDM with relatively high concentrations These findings make the volatile composition characteristics in PDM clear for the first time.

Chagas, Gilson Celso Albuquerque Jr. published the artcileProfile of volatile compounds of on-farm fermented and dried cocoa beans inoculated with Saccharomyces cerevisiae KY794742 and Pichia kudriavzevii KY794725, Application of 5-Methyl-2-phenylhex-2-enal, the main research area is Saccharomyces cerevisiae Pichia kudriavzevii volatile compound fermentation cocoa bean; GC-MS; HCA; PCA; chocolate.

This study aimed to identify the volatile compounds in the fermented and dried cocoa beans conducted with three distinct inoculants of yeast species due to their high fermentative capacity: Saccharomyces cerevisiae, Pichia kudriavzevii, the mixture in equal proportions 1:1 of both species, and a control fermentation (with no inoculum application). Three starter cultures of yeasts, previously isolated and identified in cocoa fermentation in the municipality of Tomé-Açu, Pará state, Brazil. The seeds with pulp were removed manually and placed in wooden boxes for the fermentation process that lasted from 6 to 7 days. On the last day of fermentation, the almonds were packaged properly and placed to dry (36°C), followed by preparation for the anal. of volatile compounds by GC-MS technique. In addition to the control fermentation, a high capacity for the formation of desirable compounds in chocolate by the inoculants with P. kudriavzevii was observed, which was confirmed through multivariate analyses, classifying these almonds with the highest content of aldehydes, esters, ketones and alcs. and low concentration of off-flavors. We conclude that the addition of mixed culture starter can be an excellent alternative for cocoa producers, suggesting obtaining cocoa beans with desirable characteristics for chocolate production, as well as creating a product identity for the producing region.

Gasinski, Alan published the artcileMalting procedure and its impact on the composition of volatiles and antioxidative potential of naked and covered oat varieties, Recommanded Product: 5-Methyl-2-phenylhex-2-enal, the main research area is naked covered oat volatile compound antioxidant malting.

Grains from four naked oat varieties (Amant, Maczo, Polar and Siwek) and one covered oat variety (Kozak) grown with three different nitrogen fertilization regimes were malted in a laboratory setting using specifications typical for barley malt production (45% moisture content, temperature of germination equal to 15 °C, germination time equal to 120 h). The goal was to determine, whether malting process could be used to improve pro-health properties and aroma of the covered oat and naked oat grain. Malting increased concentration of phenolic compounds (from 44.92 to 64.39 mg GAE per 100 g of grain to 158.06-393.69 mg GAE per 100 g of malt) and increased the antioxidative potential of grains (analyzed by ABTS, DPPH and FRAP assays) by 200-300%. Malting also had an effect on the changes in composition of volatile compounds: the HS-SPME-GC-MS detected 23 compounds in grain samples and 34 compounds were detected in malt samples. The total concentration of volatiles in malts was significantly higher (1659.70-39708.33 ng per 100 g) than in grain samples (882.45-2098.74 ng per 100 g). Malting mostly increased concentration of aldehydes, such as nonanal, decanal and undecanal and pyrazines, such as trimethyl- and tetramethylpyrazine in the acquired malts.

Li, Yuan-Yuan published the artcileVolatile organic compounds from a Tuber melanosporum fermentation system, Synthetic Route of 21834-92-4, the main research area is volatile organic compound flavor Tuber fermentation.

A total of 59 volatile organic compounds (VOCs) were identified from Tuber melanosporum fermentation: 53 from its fermented mycelia and 32 from the fermentation broth. Alc.-derived compounds were predominant in both the fermentation mycelia and the broth, although long chain fatty acids and isoprenoids were, for the first time, also found in the mycelia. The intense wine bouquet properties of the broth arose from several specific flavor substances, including sulfur compounds, pyrazines, furans and jasmones. Comparing the VOCs identified in this work with those previously reported, our results are more similar to the composition of the Tuber fruiting-body than previous Tuber fermentations The composition and accumulation of flavor volatiles (e.g., pyrazines, sulfur compounds, and esters) and major constituents (e.g., 3-methyl-1-butanol and 2-phenylethanol) in this fermentation were significantly influenced by the sucrose concentration in the medium. The obtained information could therefore be useful in applications to convert the flavors of truffle mycelia similar to those of the fruiting-body by optimizing the fermentation process.

Four strains of Bacillus amyloliquefaciens with high proteolytic, fibrinolytic, and angiotensin converting enzyme (ACE) inhibitory activities were used to make Bacillus-koji suitable for the production of functional doenjang. Volatile compounds in Bacillus-koji doenjang were analyzed by headspace-solid phase microextraction-GC-MS (HS-SPME-GC-MS) to compare the aroma profile with those of com. produced doenjang made with traditional meju and with modified koji. Extraction temperatures for SPME were adjusted to 30 and 90°C. Com. samples contained significantly more esters than Bacillus-koji doenjang and demonstrated a more complex volatile compound profile. Pentanoic acid, butanoic acid, or 2/3-Me butanoic acid, known as off-flavor compounds in doenjang, were not detected in one of the Bacillus-koji doenjang when extracted at 30°C. From the sensory test results, the cheese character was less intense in Bacillus-koji doenjang than com. samples, although not all sensory properties projected a significant difference.

Simon Amoikon, Tiemele Laurent published the artcileA study on the potential of yeasts isolated from palm wines to produce flavouring compounds, COA of Formula: C13H16O, the main research area is Saccharomyces Debaryomyces palm wine synthetic flavouring agent.

Despite the increasing importance of palm wines as a key element in Ivorian socio-cultural practices, and the high involment of yeasts in the production of these beverages, no studies have been devoted to aroma production of yeasts and their potential uses in biotechnol. applications. In this work, aroma profiles of 20 non pathogenic yeast strains (11 from raffia and 9 from ron, representing 13 species) among the 21 yeasts isolated were established using HS-SPME-GC/MS anal. A total of 50 Volatile Organic Compounds (VOCs) produced by these yeasts were identified and grouped into five main families, namely higher alcs., aldehydes, ketones, organic acids and esters. Among these VOCs, esters were the most abundant (28 compounds). Some strains produced specific compounds of technol. interest which could be used for diverse applications, such as beverages, ice creams, baked goods and desserts and synthetic flavouring ingredient. Among them, Hanseniaspora jakobsenii CLIB 3083 produced the highest number of VOCs.

Ba, Hoa Van’s team published research in Asian-Australasian Journal of Animal Sciences in 2012-03-31 | CAS: 21834-92-4

Asian-Australasian Journal of Animal Sciences published new progress about Alcohols Role: BSU (Biological Study, Unclassified), BIOL (Biological Study). 21834-92-4 belongs to class isoquinoline, name is 5-Methyl-2-phenylhex-2-enal, and the molecular formula is C13H16O, Related Products of isoquinoline.

Ba, Hoa Van published the artcileFlavor characteristics of Hanwoo beef in comparison with other Korean foods, Related Products of isoquinoline, the main research area is meat Hanwoo beef flavor fatty acid sesame oil volatile; Chungukjang; Doenjang; Hanwoo Beef; Sesame Oil; Volatile Flavor Component.

The present study identified volatile flavor components of Hanwoo longissimus muscle and other Korean foods (Doenjang, Chungukjang, sesame oil) and their traits were compared in relation with flavor precursors that include fatty acids and protein degradation products. Hanwoo longissimus muscle was purchased from a com. abattoir while the other foods were sampled from three sep. households. The results showed totals of 68 (9.94 μg/g), 60 (15.75 μg/g), 49 (107.61 μg/mL) and 50 (7.20 μg/g) volatile components for Doenjang, Chungukjang, sesame oil and Hanwoo beef longissimus, resp. (p<0.05). Aldehydes were the most predominant components in beef, but alcs., acids and esters, and pyrazines are probably the major contributors to the flavor characteristics of other foods. SDS-PAGE revealed that beef longissimus muscle and Doenjang showed higher protein degradation than other foods which could be likely related to chiller ageing and ripening process. The total polyunsaturated fatty acids were approx. 50, 60, 41 and 5% for Doenjang, Chungukjang, sesame oil and beef longissimus muscle, resp. Based on the mechanism(s) of generation of the volatile compounds and the chem. composition of each food sample, differences and traits of volatile flavor components among the four food types are likely due to fatty acid profiles, proteolytic activity and processing conditions. Aroma intense compounds like pyrazines and sulfur-containing compounds were limited in cooked beef in the current exptl. condition (i.e., relatively low heating temperature). This suggests that higher heating temperature as in the case of roasting is needed for the generation of high aroma notes in meat. Furthermore, proteolytic activity and stability of fatty acids during ageing have a great influence on the generation of flavor components in cooked beef. Garcia-Cayuela, Tomas published the artcileExpression in Lactococcus lactis of functional genes related to amino acid catabolism and cheese aroma formation is influenced by branched chain amino acids, Recommanded Product: 5-Methyl-2-phenylhex-2-enal, the main research area is Lactococcus araT bcaT kivD aroma branched chain amino acid.

Formation of cheese aroma compounds by Lactococcus lactis from amino acid catabolism depends on a complex network of reactions, which involve enzymes such as aminotransferases, dehydrogenases, lyases, and decarboxylases, among others. Based on the ability of some L. lactis strains to grow with low requirements of amino acids, we have studied in L. lactis IFPL730 the effect of the branched chain amino acid (BCAA) content on the expression of functional genes related to amino acid catabolism and aroma compound formation (araT, bcaT, kivD, ytjE and panE). L. lactis IFPL730 growth rate decreased under leucine, valine or isoleucine starvation but the strain reached similar viable counts at the stationary phase in all culture conditions studied. The level of expression of some genes encoding enzymes involved in amino acid catabolism changed significantly (P < 0.05) when those conditions were compared. Specially, α-ketoisovalerate decarboxylase (kivD), BCAA-specific aminotransferase (bcaT) and C-S lyase (yjtE) gene expressions increased markedly by both isoleucine and valine starvation. In addition to gene expression, formation of volatile compounds was determined in all growth conditions. The results showed that BCAA starvation conditions caused a significant increase (P < 0.05) in the formation of metabolic end products related to cheese aroma, such as 3-methylbutanal and 3-methylbutanol.
