In the present research, four different samples were investigated by multiple analyzing technol. to reveal the common unique flavor and taste of traditional Pixian Doubanjiang (PXDBJ). These samples were manufactured by inheritor according to the intangible skills and ripened for two years in different enterprises. Citric acid, malic acid, Glu and Asp were the dominant non-volatiles, the proportion of both organic acids ranged from 54.78% to 65.61%, while that of both free amino acids ranged from 22.49% to 29.39%. Et palmitate, Et laurate, γ-cis-himachalane, (+)-valencene and β-ionone were identified as typical volatile constituents by three kinds of GC techniques combined with three pretreatment approaches. These results suggested that these five volatiles and the proportion of four non-volatiles could be used as indicators of flavor and taste to discriminate with other types of traditional fermented soy pastes (miso, dajiang, gochujiang, etc), and were also proofed by sensory evaluation. It laid a vital foundation for revealing the contribution of the traditional skill to unique quality of PXDBJ and the correlation between microbial community diversity and their metabolic regulation.

Lately, plant derived proteins have been used extensively to produce Maillard reaction products (MRPs) for the preparation of various functional food products. We evaluated the effects of cysteine (Cys), methionine (Met), and thiamine (Thi) on the color and flavor development of MRPs derived from sesame seed meal. Compared with the MRPs of sesame seed hydrolyzate (SSH), Cys-MRPs had the strongest antioxidant activity and fluorescence intensity, showing the stronger taste and overall acceptability. These MRPs contained the highest sulfur compounds which resulted into stronger meat flavor. Moreover, the content of free amino acids in Met-MRPs was the highest. Compared with MRPs of SSH alone, MRPs with different sulfur content had better flavor characteristics and physicochem. properties, which entail their usage in different food ingredients.

The sensory characteristics and antioxidant capacity of Maillard reaction products (MRPs) from two substrates namely sunflower free amino acid and peptides, xylose with and without cysteine model systems (AXC, AX, PXC and PX, resp.) were evaluated and compared. The model systems were heated at 120 °C for 2.0 h and a pH of 7.4. Results showed that AXC had greater meat-like flavor and umami taste, while PXC showed great mouthfulness and continuity taste, and AX and PX showed higher caramel-like flavor and bitter taste. The addition of cysteine was found to accelerate high mol. weight peptide degradation while suppressing low mol. weight crosslinking and color formation in PXC and AXC. Furthermore, it was observed that sensory attributes of MRPs were not significantly affected by the peptides size. Results also showed that caramel-like flavor and bitter taste were significantly and pos. correlated with furans and most of the nitrogen-containing compounds while these compounds had significant and neg. impact on mouthfulness, continuity and meat-like flavor. Addnl., sulfur-containing compounds showed significant and pos. influence on meat-like flavor, while PXC and PX showed higher antioxidant activities than AXC and AX. It can therefore be concluded that sunflower peptides MRPs can be a good precursor of flavor enhancers with high antioxidant activity, while sunflower free amino acid MRPs can be used to produce meat-like flavor enhancers.

Soy protein was hydrolyzed using two enzymes to obtain soy protein hydrolyzate (SPH), the SPH was fractionated with ultrafiltration membranes to obtain peptide fractions below 1,000 Da (SP1) and 1,000-5,000 Da (SP2), and for the meantime, SPH was further completely hydrolyzed to get compound amino acids (CAA). Maillard reaction products (MRPs) were prepared from aqueous xylose-SPH/SP1/SP2/CAA model systems by heating at 120°C for 2.0 h. Compared with the original hydrolyzates and other MRPs, the MRPs from SP2 exhibited a distinctly enhanced effect on flavor, including the caramel-like, soy sauce-like odors, umami and mouthful tastes and a greatly reduced bitterness in consomme ́soup. Antioxidant activities of SPH, SP1, SP2, CAA, and their MRPs were investigated through reducing power, DPPH radical-scavenging activity, and Fe2+ chelating activity. Before Maillard reaction, the antioxidant activities of peptide fractions with different mol. weights were quite different, and SP2 showed the highest activity; however, CAA exhibited very poor antioxidant activity. The antioxidant activities of SPH, SP1, SP2, and CAA were greatly enhanced by Maillard reaction, and the MRPs prepared from xylose-CAA model system exhibited a higher antioxidant activity than those from other model systems. Pyrazines, pyrroles, furans, and thiazoles were significantly correlated with reducing power and Fe2+ chelating activity by principal component anal.

The objective of this study was to evaluate the effectiveness of using enzymic hydrolysis and microbial fermentation coupled with thermal treatment methods in valorising a type of industrially generated meat byproduct: pork trimmings, so as to produce a value-added meat-based flavouring. The pork trimmings were first hydrolyzed using a protease (Flavourzyme) under optimized conditions and then fermented into liquid hydrolyzates with mixed Lactobacillus fermentum and Pichia kluyveri; afterwards, xylose and cysteine were added to the fermented hydrolyzates for heat treatment. A characteristic “”savoury and roasted-meat”” aroma was produced due to the formation of potent sulfur-containing volatile compounds such as 2-furfurylthiol and methionol, though the browning intensity was inhibited due to the presence of cysteine. The thermal treatment did not significantly affect the fruity and sweet-smelling ester volatiles such as isoamyl acetate and hexyl acetate that resulted from microbial fermentation The decreases of amino acids and xylose might be due to their active participation in the Maillard reaction. The produced pork hydrolyzates that imparted a unique aroma could be applied as a flavor enhancer or seasoning in the food industry.

The present study has revealed an innovative method of coupling enzyme hydrolysis, yeast fermentation and thermal treatment to transform pork trimmings into a seasoning product. The pork trimmings were first enzymically hydrolyzed and fermented into liquid pork hydrolyzates, followed by adding xylose and cysteine, then heat treatment. Approx. 28% of xylose and 7% of glucose were consumed, and amino acids increased by around 31% after thermal treatment. The heated yeast fermented pork hydrolyzates possessed a characteristic ′savoury, roasted-meat and fruity sweet′ aroma as a result of the formation of thermally induced sulfur-containing volatiles such as 2-furfurylthiol, as well as retention of yeast generated esters including isoamyl acetate and hexyl acetate. The heat-treated fermented pork hydrolyzates impart an attractive and innovative aroma because of yeast fermentation and heat treatment. The innovative heated fermented pork hydrolyzates could be further processed into a nutritional and savoury pork broth and/or a meat sauce. 2021 Society of Chem. Industry.

Background:Lactococcus lactis is a lactic acid bacterium that has been used for centuries in the production of a variety of cheeses, as these bacteria rapidly acidify milk and greatly contribute to the flavor of the fermentation end-products. After a short growth phase during cheese ripening L. lactis enters an extended non-growing state while still strongly contributing to amino acid-derived flavor formation. Here, a research approach is presented that allows investigation of strain- and amino acid-specific flavor formation during the non-growing state. Results: Non-growing cells of five selected L. lactis strains were demonstrated to degrade amino acids into flavor compounds that are relevant in food fermentations and differs greatly from production of flavor compounds using growing cells. As observed earlier in other research set-ups and with other microorganisms, addition of NADH, α-ketoglutarate and pyridoxal-5-phosphate was demonstrated to be essential for optimal flavor formation, suggesting that intracellular pools of these substrates are too low for the significant production of the flavor compounds Production of flavours during the non-growing phase strongly depends on the individual amino acids that were supplied, on the presence of other amino acids (mixtures vs. single compounds), and on the strain used. Moreover, we observed that the plasmid-free model strains L. lactis MG1363 and IL1403 produce relatively low amounts of flavor components under the various conditions tested. Comprehensive 2D gas chromatog.-time-of-flight mass spectrometry was combined with descriptive sensory anal. to elucidate the specificity of strong-aroma type Baijiu (Chinese liquor) from different regions, based on regionally distinct flavor characterized by chem. and sensory profiles. Numerous potential aroma compounds (262) were identified, among which 58 aroma compounds were significantly different between the samples from Sichuan and Jianghuai regions. Relationships between these potential aroma compounds and sensory attributes were investigated by partial least squares regression and network anal. The compounds that dominantly contributed to the important sensory attributes were identified. The high pyrazines, furanoids, and carbonyls amounts contributed to the high intensities of the cellar, toasted, and grain aroma profiles of the Sichuan region samples, while the high ester and alc. levels contributed to the fruity and floral aroma profiles of the Jianghuai region samples. This approach may have practical application in flavor characterization of other alc. beverages.

Polydimethylsiloxane/divinylbenzene (PDMS/DVB) and polyacrylate fibers were used to isolate acid esters. PDMS/DVB fiber achieved the best conditions for the extraction; the extraction time was 50 min, the extraction temperature was 105°C and the desorption time was 10 min at 230°C. These solid-phase microextraction conditions were used to analyze volatile compounds extracted from insects belonging to the Dermestidae family.
